Our USDA-certified meat processing facility works exclusively with responsibly raised, 100-percent traceable meat. In addition to wholesale operations, Revel offers individual cuts at our specialty butcher shop located at Providore, Portland’s finest grocery—where limited cuts from our dry-aging lockers transform already-amazing steaks sourced from small, local producers into true standouts. The company is currently expanding to meet growing demand as a wholesale supplier to restaurants, as a custom-cutter for private parties, and as butcher of old-style retail cuts.

Founded in 2022, Hayward quickly put itself on the map as standard-bearer of hyper-seasonal new Northwest fare in Oregon wine country—earning back-to-back James Beard Award nominations in 2024 and 2025. Traditional European culinary technique and Japanese-influenced fermentation combine with local ingredients to make novel, heart-filling dishes in an atmosphere alive with resonant design touches. Chef Kari Shaughnessy trained formally as a chef and cooked at San Francisco institutions like Frances and Marla Bakery before founding Hayward.

Our newest brand, opened in the summer of 2026, Lucky Duck is a feel-good corner spot with killer coffee, fresh baked pastries, a rotating wine list, and a retail shop stocked with beautiful home goods. The back patio houses the Snack Shack, a lunch and dinnertime destination featuring residencies from chefs whose food and spirit we love. On the second floor of the historic building Lucky Duck lives in is a luxury two-bedroom accommodation available for rent to travelers in Oregon wine country.
